Description
Delicious jam-filled cookies that are perfect for any occasion.
Ingredients
Scale
- 2 cups All-Purpose Flour (Consider a gluten-free blend for a tasty alternative.)
- 1 cup Butter (Use cold butter for perfect flaky texture.)
- 8 oz Cream Cheese (Opt for low-fat cream cheese for a lighter option.)
- 1 cup Granulated Sugar (Sweetens and balances flavors.)
- 1 cup Jam (Any variety, choose your favorite flavor like raspberry or apricot.)
- 1 cup Powdered Sugar (Optional for added sweetness and elegance.)
Instructions
- In a mixing bowl, cream together cold butter and cream cheese until smooth and fluffy.
- Gradually add granulated sugar, ensuring it’s well incorporated, then mix in the flour until just combined and the dough forms.
- Shape the dough into a log, wrap it tightly in plastic wrap, and chill in the refrigerator for at least 1 hour.
- On a lightly floured surface, roll out the chilled dough into a rectangle, about 1/4 inch thick.
- Spread an even layer of your chosen jam over the surface.
- Starting from one long edge, roll the dough tightly into a log and slice it into 1/4-inch thick rounds using a sharp knife.
- Preheat your oven to 350°F (175°C).
- Place the cookie slices on parchment-lined baking sheets, leaving some space between each.
- Bake until they’re lightly golden, about 15 minutes.
- Allow the cookies to cool completely on a wire rack.
- Dust with powdered sugar or drizzle with icing if desired before serving.
Notes
- These cookies are best enjoyed fresh but can be stored in an airtight container for a few days.
- Consider using different flavors of jam for variety.
