- 300g beef sirloin, thinly sliced
- 200g rice noodles
- 4 cups beef broth
- 2 tablespoons satay sauce
- 1 tablespoon soy sauce
- 1 tablespoon vegetable oil
- 2 garlic cloves, minced
- 1 onion, sliced
- 1 carrot, julienned
- 1 bell pepper, sliced
- 2 green onions, chopped
- Fresh cilantro, for garnish
- Lime wedges, for serving
- Salt and pepper, to taste
Instructions
- Cook the rice noodles according to the package instructions. Drain and set aside.
- Heat the vegetable oil in a large pot over medium-high heat. Add the sliced beef and cook until browned, about 3-4 minutes. Remove the beef from the pot and set aside.
- In the same pot, add the minced garlic and sliced onion. Sauté for about 2 minutes until fragrant. Then add the julienned carrot and sliced bell pepper, cooking for an additional 3 minutes.
- Pour in the beef broth and bring it to a boil. Reduce the heat and add the satay sauce and soy sauce, stirring well to combine.
- Return the cooked beef to the pot, allowing it to simmer for about 5 minutes to absorb the flavors.
- Adjust the seasoning with salt and pepper according to your preference.
- Divide the cooked noodles among serving bowls. Ladle the hot broth and beef mixture over the noodles.
- Top each bowl with chopped green onions and fresh cilantro. Serve with lime wedges on the side.
