Ingredients

  • 300g beef sirloin, thinly sliced
  • 200g rice noodles
  • 4 cups beef broth
  • 2 tablespoons satay sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • 2 garlic cloves, minced
  • 1 onion, sliced
  • 1 carrot, julienned
  • 1 bell pepper, sliced
  • 2 green onions, chopped
  • Fresh cilantro, for garnish
  • Lime wedges, for serving
  • Salt and pepper, to taste

Instructions

  1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. Heat the vegetable oil in a large pot over medium-high heat. Add the sliced beef and cook until browned, about 3-4 minutes. Remove the beef from the pot and set aside.
  3. In the same pot, add the minced garlic and sliced onion. Sauté for about 2 minutes until fragrant. Then add the julienned carrot and sliced bell pepper, cooking for an additional 3 minutes.
  4. Pour in the beef broth and bring it to a boil. Reduce the heat and add the satay sauce and soy sauce, stirring well to combine.
  5. Return the cooked beef to the pot, allowing it to simmer for about 5 minutes to absorb the flavors.
  6. Adjust the seasoning with salt and pepper according to your preference.
  7. Divide the cooked noodles among serving bowls. Ladle the hot broth and beef mixture over the noodles.
  8. Top each bowl with chopped green onions and fresh cilantro. Serve with lime wedges on the side.
