Description

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 cup mixed nuts (such as almonds and walnuts)
  • 3 tbsp pure honey
  • 1/4 tsp flaky sea salt
  • Fresh herbs (optional, such as thyme or rosemary)

Instructions

  1. Gather all ingredients and tools: a mixing bowl, whisk or electric mixer, and a small saucepan.
  2. In the mixing bowl, combine ricotta cheese, olive oil, and sea salt. Whip until smooth and creamy.
  3. In the saucepan over medium heat, toast mixed nuts for about 5 minutes until golden brown.
  4. Pour honey over the toasted nuts and stir continuously for 1-2 minutes until well-coated.
  5. Spoon whipped ricotta into a serving bowl and top with warm honeyed nuts just before serving.
  6. Garnish with additional honey drizzle or fresh herbs if desired. Serve immediately with crusty bread or crackers.
