Ingredients

  • 2 cups quinoa
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup parsley, chopped
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Rinse the quinoa under cold water.
  2. In a saucepan, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for about 15 minutes.
  4. Remove from heat and let stand for 5 minutes.
  5. Fluff quinoa with a fork and stir in olive oil and salt.
  6. Add cherry tomatoes, cucumber, parsley, and feta cheese. Mix well.
  7. Serve warm or cold.
