- 2 cups quinoa
- 4 cups vegetable broth

Instructions
- Rinse the quinoa under cold water.
- In a saucepan, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for about 15 minutes.
- Remove from heat and let stand for 5 minutes.
- Fluff quinoa with a fork and stir in olive oil and salt.
- Add cherry tomatoes, cucumber, parsley, and feta cheese. Mix well.
- Serve warm or cold.
