A comforting dish of chicken and dumplings in a rich broth.
Ingredients

- 3–4 boneless, skinless chicken breasts (about 1 pound)
- 4 cups low-sodium chicken broth
- 2 cups Bisquick mix
- 1 cup whole milk
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 medium onion, diced
- 1 tsp garlic powder
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, sauté the diced onion, carrots, and celery until soft (about 5 minutes).
- Add the chicken breasts and pour in the chicken broth. Simmer until the chicken is fully cooked.
- Meanwhile, mix the Bisquick with milk in a bowl until smooth. The dough should be thick but scoopable.
- Remove the cooked chicken, shred it into bite-sized pieces, and return it to the pot.
- Stir in garlic powder, thyme, salt, and pepper.
- Spoon dollops of the dumpling dough onto the simmering broth mixture.
- Cover tightly and let simmer on low heat for about 15 minutes without lifting the lid.
