Ingredients

  • 34 boneless, skinless chicken breasts (about 1 pound)
  • 4 cups low-sodium chicken broth
  • 2 cups Bisquick mix
  • 1 cup whole milk
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 medium onion, diced
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, sauté the diced onion, carrots, and celery until soft (about 5 minutes).
  2. Add the chicken breasts and pour in the chicken broth. Simmer until the chicken is fully cooked.
  3. Meanwhile, mix the Bisquick with milk in a bowl until smooth. The dough should be thick but scoopable.
  4. Remove the cooked chicken, shred it into bite-sized pieces, and return it to the pot.
  5. Stir in garlic powder, thyme, salt, and pepper.
  6. Spoon dollops of the dumpling dough onto the simmering broth mixture.
  7. Cover tightly and let simmer on low heat for about 15 minutes without lifting the lid.
