Ingredients

  • 4 cups Yukon Gold potatoes, peeled and diced
  • 2 cups diced ham
  • 1 cup sweet onions, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 tbsp fresh thyme or parsley, chopped (plus extra for garnish)
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by washing and peeling the potatoes, then chopping them into bite-sized pieces. Dice the onions and mince the garlic.
  2. In a large pot over medium heat, melt butter and sauté the onions until translucent (about 5 minutes). Add garlic and sauté until fragrant.
  3. Stir in the diced potatoes and ham; cook for an additional 3-4 minutes.
  4. Pour in chicken broth to cover the potatoes completely. Bring to a simmer for about 15 minutes or until potatoes are fork-tender.
  5. Stir in heavy cream gently; simmer for another 5 minutes until creamy. Season with salt and pepper to taste.
  6. Garnish with fresh herbs before serving hot.
