Description
A delicious and healthy chicken quinoa bowl featuring a zesty lime dressing.
Ingredients

- 2 limes, juice and zest (about 1/3 cup)
- 2 tbsp olive oil
- 2 tbsp cilantro, chopped
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tbsp honey
- to taste salt
- to taste pepper
- 1 lb chicken breast, boneless, skinless
- 2 cups quinoa, cooked (from 1 cup dry quinoa)
- 2 cups greens, Romaine or butter lettuce
- 1 cup black beans, canned, rinsed and drained
- 1 cup corn, fresh or frozen, thawed
- 1 cup cherry tomatoes, halved
- 1/4 cup cilantro, for garnish
- Optional toppings: avocado, lime wedges, Greek yogurt
Instructions
- Combine lime juice, olive oil, cilantro, chili powder, cumin, honey, salt, and pepper in a bowl and blend.
- Marinate chicken in the mixture and refrigerate for 30–120 minutes.
- Cook quinoa according to package directions; fluff with a fork and set aside.
- Cook chicken over medium heat for 5–6 minutes per side until fully cooked.
- Remove the chicken and let it rest for 5 minutes.
- Assemble bowls with quinoa, greens, black beans, corn, tomatoes, cilantro, and sliced chicken.
- Top with optional toppings and serve warm or chilled.
Notes
- This dish can be made ahead of time and is great for meal prep.
- Feel free to add or substitute with your favorite veggies.
