Description

A delicious and healthy stuffed salmon recipe featuring spinach, feta, and roasted red peppers.


Ingredients

Scale
  • 4 pieces salmon (6 oz each)
  • 2 Tbsp olive oil (divided)
  • 3 cups baby spinach (packed)
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • A pinch of cayenne pepper
  • 5 oz feta cheese (approx. 150 grams)
  • 1/4 cup parmesan (freshly grated)
  • 1/4 cup jarred roasted red peppers (chopped)
  • Salt + pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat 1 Tbsp olive oil over medium heat. Add spinach, Italian seasoning, paprika, and cayenne. Sauté until spinach is wilted. Remove from heat.
  3. In a bowl, mix sautéed spinach, feta, parmesan, and roasted red peppers. Season with salt and pepper.
  4. Slice pockets into salmon fillets. Stuff each pocket with the filling mixture.
  5. Drizzle remaining olive oil over stuffed salmon, season with salt and pepper.
  6. Place salmon in a baking dish and bake for 20-25 minutes until cooked through.

Notes

  • Adjust the amount of cayenne pepper to control the heat level.
  • Serve with a side salad for a complete meal.
