  • 1 carrot, julienned or grated
  • 3 garlic cloves, minced
  • 3 cups cabbage, thinly sliced (green or napa cabbage)
  • 1 tsp ground ginger
  • ¼ cup low sodium soy sauce
  • 2 tsp sesame oil
  • ½ tsp granulated sugar
  • 1 tbsp chopped green onion (optional for garnish)
  • ¼ tsp sesame seeds (optional for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add ground beef and season with salt and pepper. Cook until browned, breaking it up with a spatula.
  2. Once the beef is browned, add diced onion and grated carrots. Sauté for 5-7 minutes until softened.
  3. Stir in minced garlic and cook for an additional 30 seconds until fragrant.
  4. Add sliced cabbage, ground ginger, soy sauce, sesame oil, and sugar. Stir to combine. Continue sautéing for 5-7 minutes until cabbage softens but still retains a slight crunch.
  5. Remove from heat and garnish with green onions and sesame seeds, if desired.
  6. Serve immediately, optionally with rice, noodles, or a fresh salad.
