Description

Delicious grilled chicken sliders topped with fresh pineapple and veggies.

Ingredients

Scale
  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup soy sauce
  • 1/4 cup pineapple juice
  • 2 cloves garlic (minced)
  • 2 cups shredded cabbage
  • 1/4 cup green onions (sliced thinly)
  • 1/2 cup mayonnaise
  • 2 tablespoons rice vinegar
  • 4 pieces Hawaiian rolls
  • 4 slices sliced pineapple (grilled or fresh)
  • 4 slices sliced cheese (Swiss or provolone optional)

Instructions

  1. Marinate chicken breasts in a blend of pineapple juice, soy sauce, and garlic for at least 30 minutes.
  2. Preheat your grill to medium-high heat (about 375°F).
  3. Grill the marinated chicken for 6-7 minutes on each side or until the internal temperature reaches 165°F.
  4. While the chicken is grilling, slice fresh pineapple and prepare your favorite toppings like lettuce, tomato, and red onion.
  5. Once the chicken is done, let it rest for a few minutes.
  6. Then layer it on a toasted bun with grilled pineapple slices and your chosen toppings.
  7. Drizzle a generous amount of teriyaki sauce over everything for an extra burst of flavor.

Notes

  • Consider using low-sodium soy sauce for a healthier option.
  • Fresh pineapple juice is best for maximum flavor.
  • You can substitute mayonnaise with Greek yogurt for a lighter version.
  • You can mix in some carrots with the cabbage for added texture.
  • Feel free to use apple cider vinegar instead of rice vinegar.
