Description
Delicious grilled chicken sliders topped with fresh pineapple and veggies.
Ingredients
Scale
- 4 pieces boneless, skinless chicken breasts
- 1/4 cup soy sauce
- 1/4 cup pineapple juice
- 2 cloves garlic (minced)
- 2 cups shredded cabbage
- 1/4 cup green onions (sliced thinly)
- 1/2 cup mayonnaise
- 2 tablespoons rice vinegar
- 4 pieces Hawaiian rolls
- 4 slices sliced pineapple (grilled or fresh)
- 4 slices sliced cheese (Swiss or provolone optional)
Instructions
- Marinate chicken breasts in a blend of pineapple juice, soy sauce, and garlic for at least 30 minutes.
- Preheat your grill to medium-high heat (about 375°F).
- Grill the marinated chicken for 6-7 minutes on each side or until the internal temperature reaches 165°F.
- While the chicken is grilling, slice fresh pineapple and prepare your favorite toppings like lettuce, tomato, and red onion.
- Once the chicken is done, let it rest for a few minutes.
- Then layer it on a toasted bun with grilled pineapple slices and your chosen toppings.
- Drizzle a generous amount of teriyaki sauce over everything for an extra burst of flavor.
Notes
- Consider using low-sodium soy sauce for a healthier option.
- Fresh pineapple juice is best for maximum flavor.
- You can substitute mayonnaise with Greek yogurt for a lighter version.
- You can mix in some carrots with the cabbage for added texture.
- Feel free to use apple cider vinegar instead of rice vinegar.
