- 1/2 cup buffalo sauce
- 1 1/2 cups shredded cheddar and Monterey Jack cheese blend
- 4 large flour tortillas
- 1/2 cup sour cream (for serving)
- 2 green onions, chopped (for topping)
- 1 cup shredded lettuce (for serving)
Instructions
- Cook the turkey: In a large skillet over medium heat, cook the ground turkey until browned and no longer pink, about 5-7 minutes.
- Add the sauce: Stir in the buffalo sauce, allowing it to simmer for an additional 2 minutes.
- Prepare tortillas: Lay a tortilla flat, sprinkle one side with cheese, then add a generous spoonful of the turkey mixture and top with more cheese before folding.
- Cook quesadillas: In the same skillet, cook each folded quesadilla for about 3 minutes per side until golden brown and crispy.
- Serve: Slice into wedges and top with sour cream and chopped green onions.
