Ingredients

- 1 lb beef chuck roast, cubed
- 8 oz cremini mushrooms, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups low-sodium beef broth
- 1 sheet puff pastry (about 14 oz)
- 2 tsp fresh thyme (or 1 tsp dried thyme)
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet over medium heat, add olive oil. Sauté onions until translucent; then add garlic and mushrooms until golden brown.
- Add cubed beef to the skillet; season with salt and pepper. Brown all sides of the beef.
- Pour in beef broth and stir in thyme; simmer for about 15 minutes.
- Roll out puff pastry on a floured surface; cut shapes to fit your baking dish.
- Transfer the beef mixture into a baking dish; cover with puff pastry, sealing edges and cutting slits for steam.
- Bake for 25-30 minutes or until the crust is golden brown.
