Description
A delicious and creamy baked potato dish with chicken, mushrooms, and Monterey Jack cheese.
Ingredients

- 3 lbs Golden Potatoes, cubed
- 10 oz sliced white mushrooms
- 1 diced onion
- 1 chicken breast, cubed
- 8 oz Monterey Jack Cheese, shredded
- 3 Tbsp mayonnaise
- 2 tsp garlic salt
- 1/2 tsp ground black pepper
Instructions
- In an oven-safe pot, sauté the onion, mushrooms, and chicken in 4 Tbsp of oil until browned (about 10 minutes). Set aside.
- Meanwhile, in a separate skillet, sear the potatoes over medium-high heat in 3 Tbsp of oil until the potatoes release a little sweat (about 15 minutes).
- Add the seared potatoes to the mushroom mixture and combine all the remaining ingredients. Toss to coat.
- Cover and bake at 350°F for 30 minutes.
Notes
- For added flavor, consider using fresh herbs such as thyme or rosemary.
- Can be served as a side dish or a main course.
