Description

A delicious and creamy baked potato dish with chicken, mushrooms, and Monterey Jack cheese.


Ingredients

Scale
  • 3 lbs Golden Potatoes, cubed
  • 10 oz sliced white mushrooms
  • 1 diced onion
  • 1 chicken breast, cubed
  • 8 oz Monterey Jack Cheese, shredded
  • 3 Tbsp mayonnaise
  • 2 tsp garlic salt
  • 1/2 tsp ground black pepper

Instructions

  1. In an oven-safe pot, sauté the onion, mushrooms, and chicken in 4 Tbsp of oil until browned (about 10 minutes). Set aside.
  2. Meanwhile, in a separate skillet, sear the potatoes over medium-high heat in 3 Tbsp of oil until the potatoes release a little sweat (about 15 minutes).
  3. Add the seared potatoes to the mushroom mixture and combine all the remaining ingredients. Toss to coat.
  4. Cover and bake at 350°F for 30 minutes.

Notes

  • For added flavor, consider using fresh herbs such as thyme or rosemary.
