Description

A delicious and comforting shrimp miso soup.


Ingredients

  • 4 cups vegetable broth
  • 2 tablespoons miso paste
  • 1 tablespoon freshly grated ginger
  • 1 clove garlic, minced
  • 1 tablespoon soy sauce
  • 1 lemon, juiced
  • 1 pound shrimp, peeled and deveined
  • 1 cup bok choy or spinach
  • Salt and pepper to taste
  • Green onions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. Gather all your ingredients and measure them out.
  2. In a large pot, bring the vegetable broth to a gentle simmer over medium heat.
  3. In a small bowl, mix the miso paste with a few tablespoons of the hot broth to dissolve it. Then, add it back to the pot.
  4. Add grated ginger, minced garlic, and soy sauce to the pot. Stir well to combine.
  5. Once the broth is simmering, add the shrimp and cook until they turn pink, about 3-4 minutes.
  6. Toss in bok choy or spinach and let it wilt in the hot broth for an additional minute.
  7. Stir in the lemon juice and season with salt and pepper to taste. Remove from heat.
