A delicious and comforting shrimp miso soup.
Ingredients

- 4 cups vegetable broth
- 2 tablespoons miso paste
- 1 tablespoon freshly grated ginger
- 1 clove garlic, minced
- 1 tablespoon soy sauce
- 1 lemon, juiced
- 1 pound shrimp, peeled and deveined
- 1 cup bok choy or spinach
- Salt and pepper to taste
- Green onions, for garnish
- Sesame seeds, for garnish
Instructions
- Gather all your ingredients and measure them out.
- In a large pot, bring the vegetable broth to a gentle simmer over medium heat.
- In a small bowl, mix the miso paste with a few tablespoons of the hot broth to dissolve it. Then, add it back to the pot.
- Add grated ginger, minced garlic, and soy sauce to the pot. Stir well to combine.
- Once the broth is simmering, add the shrimp and cook until they turn pink, about 3-4 minutes.
- Toss in bok choy or spinach and let it wilt in the hot broth for an additional minute.
- Stir in the lemon juice and season with salt and pepper to taste. Remove from heat.
