Description

Delicious and moist banana muffins made with ripe bananas.


Ingredients

  • 3 ripe bananas, mashed
  • ½ cup granulated sugar
  • ⅓ cup melted butter
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 teaspoon ground cinnamon (optional)
  • 1 ½ cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in melted butter into the mashed bananas until well combined.
  4. Add the beaten egg and vanilla extract, mixing until the ingredients are thoroughly combined.
  5. Sprinkle the baking soda and a pinch of salt into the mixture, stirring well.
  6. If you desire, add ground cinnamon for additional warmth and flavor.
  7. Gradually fold in the all-purpose flour until the batter comes together. Do not overmix; small lumps are fine.
  8. Evenly distribute the batter into the prepared muffin tin, filling each cup about two-thirds full.
  9. Place the muffin tin in the oven and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  10. Remove the muffins from the oven and let them cool in the tin for about 10 minutes. Then, transfer them to a wire rack to cool completely.
