Description
A deliciously sweet and simple dessert made with sliced peaches and coconut cake mix.
Ingredients

- 3 15-ounce cans sliced peaches in juice
- ¼ cup + 2 tablespoons light brown sugar
- 1 tablespoon cornstarch
- 2 teaspoons vanilla extract
- ½ teaspoon salt
- 15 ounces coconut cake box mix
- 1 cup butter (2 sticks, cut into thin slices about 1/4" thick)
Instructions
- Grease a 9×13" baking dish and preheat oven at 350F.
- Mix together peaches (with their liquid), brown sugar, cornstarch, vanilla, and salt. Spread into the bottom of a greased 9×13 pan.
- Sprinkle dry cake mix evenly over the top of the fruit mixture and evenly distribute butter slices over top.
- Bake for 55 – 60 minutes until the filling is bubbling and the top is golden brown.
- Let stand for 10-15 minutes. Serve warm, topping with vanilla ice cream or whipped cream, if desired.
Notes
- Great served warm or at room temperature.
- Can be topped with whipped cream or ice cream for added sweetness.
