Peach Coconut Cake

Description

A deliciously sweet and simple dessert made with sliced peaches and coconut cake mix.


Ingredients

Scale
  • 3 15-ounce cans sliced peaches in juice
  • ¼ cup + 2 tablespoons light brown sugar
  • 1 tablespoon cornstarch
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • 15 ounces coconut cake box mix
  • 1 cup butter (2 sticks, cut into thin slices about 1/4" thick)

Instructions

  1. Grease a 9×13" baking dish and preheat oven at 350F.
  2. Mix together peaches (with their liquid), brown sugar, cornstarch, vanilla, and salt. Spread into the bottom of a greased 9×13 pan.
  3. Sprinkle dry cake mix evenly over the top of the fruit mixture and evenly distribute butter slices over top.
  4. Bake for 55 – 60 minutes until the filling is bubbling and the top is golden brown.
  5. Let stand for 10-15 minutes. Serve warm, topping with vanilla ice cream or whipped cream, if desired.

  • Great served warm or at room temperature.
  • Can be topped with whipped cream or ice cream for added sweetness.
