Description
A refreshing salad featuring ripe avocados, cucumbers, cherry tomatoes, and a light lemon dressing.
Ingredients

- 2 ripe avocados, diced
- 1 medium cucumber, sliced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 2 tbsp lemon juice (freshly squeezed)
- 3 tbsp extra virgin olive oil

Instructions
- Wash all vegetables thoroughly. Dice the avocados and place them in a large mixing bowl to prevent browning.
- Slice the cucumber into half-moons and halve the cherry tomatoes. Add these along with the thinly sliced red onion and chopped parsley to the mixing bowl.
- In a small bowl, whisk together the lemon juice and olive oil. Season with salt and pepper to taste before drizzling over the salad.
- Gently toss all ingredients in the bowl until well combined without mashing the avocados.
- Serve immediately for freshness or chill for about 30 minutes before serving.
Notes
- This salad is best served fresh but can be refrigerated for a short time.
- Experiment with different herbs for added flavor.
