Description

A refreshing salad featuring ripe avocados, cucumbers, cherry tomatoes, and a light lemon dressing.


Ingredients

  • 2 ripe avocados, diced
  • 1 medium cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice (freshly squeezed)
  • 3 tbsp extra virgin olive oil
  • to taste Salt and pepper

Instructions

  1. Wash all vegetables thoroughly. Dice the avocados and place them in a large mixing bowl to prevent browning.
  2. Slice the cucumber into half-moons and halve the cherry tomatoes. Add these along with the thinly sliced red onion and chopped parsley to the mixing bowl.
  3. In a small bowl, whisk together the lemon juice and olive oil. Season with salt and pepper to taste before drizzling over the salad.
  4. Gently toss all ingredients in the bowl until well combined without mashing the avocados.
  5. Serve immediately for freshness or chill for about 30 minutes before serving.

Notes

  • This salad is best served fresh but can be refrigerated for a short time.
