Chocolate Marshmallow Cookies

Description

Delicious chocolate cookies loaded with almonds and marshmallows, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter (softened to room temperature)
  • 1 cup light brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 1/2 cups mini semi-sweet chocolate chips (divided)
  • 1 cup almonds (roughly chopped)
  • 1 1/2 cups mini marshmallows

Instructions

  1. Preheat the oven to 350 degrees F. Line a cookie sheet with parchment paper or silpat and set it aside.
  2. In a large mixing bowl, beat butter with both sugars until light and fluffy (2-3 minutes). Add in eggs and vanilla extract.
  3. Add flour, cocoa powder, baking soda, and salt. Beat just until dough comes together. Add in 1 1/4 cup of mini morsels, almonds, and the mini marshmallows.
  4. Using a 2 Tablespoon cookie scoop, drop dough onto prepared cookie sheet. Sprinkle top with some of the reserved mini chocolate chips.
  5. Bake cookies for about 11-13 minutes. Remove from oven and cool on baking sheet for 5-10 minutes before removing and cooling completely on a wire cooling rack.

Notes

  • For best results, cool the cookies completely before storing.
  • Feel free to substitute other nuts or chocolate types if desired.
