Description

This slow cooker recipe features tender chicken thighs with hearty vegetables, perfect for a comforting meal.


Ingredients

Scale
  • 2 lbs chicken thighs (boneless skinless)
  • 2 tbsp poultry seasoning
  • 1 pinch salt and pepper
  • 3 large red potatoes (quartered or in 68 pieces for larger)
  • 1 cup carrots (baby or sliced small)
  • 1 cup chicken broth (or stock)

Instructions

  1. Add chicken thighs in a single layer, season with poultry seasoning and salt and pepper.
  2. Add potatoes and carrots into pot and pour broth over everything.
  3. Cook on low for 4 – 6 hours or until meat is cooked thru and vegetables are tender.

Notes

  • This recipe can easily be doubled.
  • Serve with a side of crusty bread for a complete meal.
