Description

Smoked sweet potatoes seasoned to perfection with olive oil and butter.


Ingredients

Scale
  • 2 sweet potatoes (Mine weighed 3/4 to 1 pound each)
  • 1 teaspoon olive oil
  • 1 tablespoon butter
  • brown sugar or sweetener (to taste)

Instructions

  1. Preheat the smoker to 225 degrees.
  2. Rub the olive oil onto both sides and poke holes all over the sweet potatoes.
  3. Place the sweet potatoes on the smoker. Cook for 2 hours.
  4. Adjust the temperature to 350 degrees. Cook until the sweet potatoes reach an internal temperature of 205-212 degrees and have a soft interior when poked.
  5. Slice the sweet potatoes and open and add butter and brown sugar or sweetener.
