Description
A refreshing and easy-to-make lemon garlic orzo pasta dish that is perfect as a side or main meal.
Ingredients

- 1 cup orzo pasta
- 2 cups vegetable broth (low-sodium)
- 2 medium fresh lemons (juiced and zested)
- 3 cloves garlic (minced)
- 2 tbsp extra virgin olive oil
- ¼ cup fresh parsley (chopped)
- Salt and pepper to taste
Instructions
- In a medium saucepan, heat vegetable broth over medium heat until gently simmering.
- In another pan, heat olive oil over medium heat and sauté minced garlic until fragrant (about 1-2 minutes).
- Stir in the orzo pasta and pour in the warm vegetable broth; mix well.
- Simmer for 10-12 minutes until the orzo is al dente and has absorbed most of the liquid, stirring occasionally.
- Remove from heat and stir in lemon juice and zest.
- Fold in chopped parsley, salt, and pepper; serve warm.

- This dish can be served warm or at room temperature.
