Description

Enjoy these crispy baked zucchini chips as a healthy snack or appetizer!


Ingredients

Scale
  • 1/3 cup olive oil
  • 1½ teaspoons Italian seasoning
  • 1/4 teaspoon garlic powder
  • 1/2 cup Parmesan cheese (grated)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 small zucchini (sliced into 1/8" rounds)
  • 2 teaspoons parsley (fresh, chopped)
  • 1/2 cup dipping sauce (marinara or Alfredo sauce)

Instructions

  1. Preheat oven to 400 degrees F.
  2. In a medium bowl, whisk together the olive oil, Italian seasoning, garlic powder, Parmesan cheese, salt, and pepper.
  3. Add the thinly sliced zucchini to the oil mixture and use tongs to toss and coat the oil on the zucchini.
  4. Place the coated thin slices of zucchini onto a parchment paper-lined baking sheet in a single layer (you may need more than one sheet tray).
  5. Bake in a preheated oven until golden brown, or about 12-18 minutes.
  6. Remove chips from the oven and let cool slightly before serving with your favorite dipping sauces.
